The fact that I am not the only one with this issue does create some validity to what I claim to be happening.  The fact that I have created a new CRM organization, connected from a fresh install of Outlook and had the same thing occur is somewhat confirming.  Add to that the Microsoft tech support guy that reproduced the error in their lab and filed it as a needed repair to CRM also contributes.

Now, every activity I create in CRM associated with a case (which is pretty much how we do it) ends up in Outlook with a reminder data matching the due date in CRM but the start and end dates stripped out -completely missing.  I have to then re-add the date in Outlook for that to show.

My activities list in CRM is full of no start or due date items.  This is beyond frustrating and makes it very hard to use.  We are running on RU12 with both the server and Outlook Connector software updated.  Not fun.
