I ended up using Visual Ribbon Editor to hide the Add Existing button by going to the Unit Line Item entity, viewing the Sub Grid ribbon and hiding that button. I also went to the form for adding a new line item, and added the Truck Serial as a required field as suggested here. Seems to have done the trick!
